I put this recipe together for those of you who remember “Bliss Cafe” and for those of you that don’t it’s definitely worth trying out.
2 cups cooked red or black beans,
½ cup grated carrot
1 t diced jalapeno
2 cloves garlic, finely diced
1 t. cumin
¼ cup panko (Japanese bread crumbs)*
1 T chipotle en adobo, puree’
1 egg white, beaten
2 T chopped cilantro
Sea salt and fresh black pepper*You can substitute cooked Quinoa for a gluten free version
Throw your beans in a large bowl, mash it up (I like to squish it together with my hands, but you can use a potato masher), add the rest of the ingredients and season to taste with salt and pepper, form your mix into 4 patties, about ½ thick and 4-5 inches diameter. Preheat a frying pan to med-high temp, add a little xvo oil, and then add your burgers, cook for about 3 minutes on each side then top with your favorite cheese and some awesome topping (avocado, red onion, and arugula are good ones!)
Serve on a toasted whole wheat bun with roasted garlic aioli and/or Dijon mustard.
